Ingredients

  • 1 to 1 1/2 lb. chicken breast (boneless), cut into strips
  • 2 Tbsp. dry sherry
  • 4 artichoke hearts, quartered
  • 1 c. chicken stock
  • 1 clove garlic, finely chopped
  • 3 Tbsp. parsley for garnish
  • 1 1/2 c. whipping cream
  • 1/2 c. fresh sliced mushrooms
  • 1/4 c. red peppers, sliced into strips
  • 4 Tbsp. butter
  • 1 Tbsp. white wine
  • 2 lb. linguini, cooked

Directions

    Dust chicken with flour, salt and pepper.

    Saute chicken in butter and garlic over medium heat 1 to 2 minutes.

    Add peppers, mushrooms and artichokes.

    Saute 5 to 10 minutes more.

    Add sherry, whipping cream

    and chicken stock mixed with cooked linguini.

    Don't overcook.
