- 1 c. chickpeas, minced and drained
- 1 c. cucumber, cubed
- 2 c. tomatoes, cubed
- 1 c. sweet yellow onion, cubed
- 2 Tbsp. red wine vinegar
- 1 Tbsp. olive oil (virgin)
- 2 Tbsp. basil
- 1 Tbsp. parsley
- salt and pepper to taste
Directions

1In a large bowl, combine beans, cucumber, tomatoes, onion, basil and parsley.
