  • 1 c. chickpeas, minced and drained
  • 1 c. cucumber, cubed
  • 2 c. tomatoes, cubed
  • 1 c. sweet yellow onion, cubed
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil (virgin)
  • 2 Tbsp. basil
  • 1 Tbsp. parsley
  • salt and pepper to taste

Directions

    In a large bowl, combine beans, cucumber, tomatoes, onion, basil and parsley.

    Add vinegar and olive oil and salt and pepper to taste.

    Toss to blend.
