- 1 lb. chicken breast, cut into 1 inch cabob style
- 1/4 c. olive oil
- 1/3 onion
- 1 bell pepper
- 1 tomato
- 3 cloves garlic
- 1 tsp. paprika
- 1/2 tsp. cumin
- 1/2 tsp. black pepper
- 4 stems basil
- 3 stems parsley
- 2 stems cilantro
- 12 Greek olives
- 1/4 preserved lemon
Directions

1Heat a hint of oil almost to frying temperature.

2Add chicken, garlic and onion and saute 3 to 5 minutes.

3Add spices, lemon juice and salt to taste.

4Stir for 5 to 8 minutes.

5Cooking time should not exceed 15 minutes.

6Put on plates and garnish with lemon and olives, cut into juliennes.
