Ingredients

  • 1 lb. chicken breast, cut into 1 inch cabob style
  • 1/4 c. olive oil
  • 1/3 onion
  • 1 bell pepper
  • 1 tomato
  • 3 cloves garlic
  • 1 tsp. paprika
  • 1/2 tsp. cumin
  • 1/2 tsp. black pepper
  • 4 stems basil
  • 3 stems parsley
  • 2 stems cilantro
  • 12 Greek olives
  • 1/4 preserved lemon

Directions

    Heat a hint of oil almost to frying temperature.

    Add chicken, garlic and onion and saute 3 to 5 minutes.

    Add spices, lemon juice and salt to taste.

    Stir for 5 to 8 minutes.

    Cooking time should not exceed 15 minutes.

    Put on plates and garnish with lemon and olives, cut into juliennes.
