Chicken Penne

Ingredients

  • 16 ounces, weight Penne Pasta
  • 1/2 cups Olive Oil
  • 5 dashes Italian Seasoning
  • 4 whole Boneless, Skinless Chicken Breasts
  • 1 package Sliced Fresh Mushrooms (8 Ounce Package Or More)
  • 3 ounces, weight Julienne Cut Sun-dried Tomatoes
  • 8 ounces, weight Sliced Black Olives

Directions

    Cook the pasta according to package directions.

    Cut chicken into 1 inch cubes.

    In large heavy skillet, heat olive oil and Italian seasoning on medium heat.

    Add chicken and cook until almost done; add mushrooms (you can use less mushrooms but I like a lot of them) and cook for 3 minutes.

    Add in olives and tomatoes to heat through.

    I will sometimes add fresh spinach at this point as well.

    Toss pasta with the contents of the skillet.

    Add additional olive oil to taste.

    This makes four generous servings.

    I also like to eat the leftovers cold from the refrigerator.
