  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 8 chicken breast cutlets (boneless, skinless)
  • 1 Tbsp. olive oil
  • 1 Tbsp. margarine
  • 2/3 c. chicken broth
  • 2 Tbsp. lemon juice
  • 8 to 12 thin lemon slices
  • 2 Tbsp. chopped fresh parsley
  • a few capers

    Dredge chicken in mixture of flour, salt and pepper.

    Heat margarine and oil in skillet (large - one layer of chicken).

    Add chicken; saute until brown and cooked through (3 to 4 minutes). Remove to dish and keep warm.
