  • 1 (2 1/2 lb.) broiler-fryer chicken
  • 2 qt. water
  • 1 tsp. salt
  • 1/3 c. margarine
  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1 c. chopped carrots
  • 1 small potato, peeled and chopped
  • 1/2 c. frozen English peas, thawed
  • 1/2 c. all-purpose flour
  • 1 c. half and half
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 (15 oz.) pkg. refrigerated pie crusts
  • 1 tsp. all-purpose flour

Directions

    Bring chicken, water and 1 teaspoon salt to a boil in Dutch oven; cover, reduce heat and simmer 1 hour.

    Remove chicken, reserving broth.

    Skin, bone and chop chicken; set aside.

    Skim fat from broth, reserving 2 cups broth.
