Chicken Quesadilla

  • 3 flour tortillas
  • 1/4 lb. Cheddar cheese
  • 2 chicken breasts, cooked, boned and cut in thin strips
  • 1/2 c. salsa or picante
  • margarine

Directions

    Place a tortilla in a lightly buttered skillet.

    Layer with 1/2 of cheese, 1/2 of chicken and 1/2 of salsa or picante.

    Place another tortilla on top.

    Repeat layering.

    Top with last tortilla. Drizzle margarine on top.

    Slowly cook to heat through and crisp the tortilla.

    Do not burn.

    Carefully turn and finish cooking. Can be placed in a 325° oven to keep warm.

    Cut into 8 wedges and serve.
