Chicken Quesadillas

  • 2 or 3 whole chicken breasts
  • 1 c. grated Monterey Jack cheese
  • 1 c. grated Cheddar cheese
  • 1 (4 oz.) can chopped green chilies
  • 6 (12 inch) or 12 (6 inch) flour tortillas
  • 1 Tbsp. melted butter
  • 1 tsp. chili powder
  • picante sauce, sour cream, guacamole (optional)

Directions

    Boil chicken breasts in water seasoned with salt and pepper to taste until done; skin and debone. Chip up meat.

    Melt butter; brush each tortilla with butter. Layer each tortilla with chicken, chili powder, cheese and green chilies. Fold over and brush with butter. Bake in 350° oven about 3 or 5 minutes or until light brown. Serve with picante sauce, sour cream or guacamole.
