Chicken Rice Bake

  • 1 c. long grain rice
  • 3 chicken breasts, split
  • 1/2 chopped onion
  • 1 garlic clove, minced
  • 1 c. chopped celery
  • 1/2 c. water
  • 1 can beef or chicken broth
  • 1/2 tsp. salt
  • 1/2 tsp. Accent
  • 1/4 tsp. oregano

    Toast rice for 25 minutes in 350° oven.

    Dredge chicken in flour, salt and pepper and brown in 1/4 cup hot fat.

    Remove chicken, then cook onion, celery and garlic until tender.

    Stir in rice and remaining ingredients.

    Transfer into 11 x 7-inch dish, top with chicken breasts and cover tightly with foil.

    Bake at 350° for 50 minutes or until chicken is done and rice tender.
