  • 3 lb. broiler-fryer chicken, cut up, or boneless chicken breasts
  • 1 tsp. oregano leaves, crushed
  • 1 (15 oz.) can Italian tomato sauce
  • 1 c. Uncle Ben's converted rice
  • 2 c. coarsely chopped zucchini or frozen Italian green beans
  • 1 1/3 c. water
  • 1 tsp. salt
  • shredded Mozzarella cheese

Directions

    Preheat oven to 375°.

    Remove excess fat from chicken; season with salt and oregano.

    Remove and put aside 1/4 cup tomato sauce. Combine remaining sauce, rice, zucchini, water and salt in a 12 x 8 x 2-inch baking dish; stir well.

    Arrange chicken over rice mixture.

    Cover tightly with foil; bake for 1 hour, or until chicken is tender and most of liquid is absorbed.

    Spoon reserved sauce over chicken; sprinkle with cheese.

    Return to oven for 2 or 3 minutes to melt cheese.
