  • 6 medium skinless chicken breasts, cut in 1-inch chunks
  • 3 Tbsp. olive or salad oil
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1 medium cucumber, shredded and peeled (use paper towels to squeeze water from cucumber)
  • 1 (8 oz.) container plain low-fat yogurt
  • 1 garlic clove, minced
  • 1/2 tsp. salt

Directions

    Toss chicken in bowl with salad oil, oregano and salt; set aside.
