  • 1 large chicken breast
  • 1 (8 oz.) box spaghetti
  • 1 lb. Velveeta cheese, softened
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Ro-Tel diced tomatoes and green chilies, do not drain
  • 1 onion, chopped
  • 1 bell pepper, chopped

    Boil chicken breasts and save broth.

    Remove the skin.

    Cook spaghetti in the chicken broth and then drain.

    Chop chicken in bite-size pieces.

    Also chop onion and peppers.

    Combine chopped chicken, onion, pepper with soups and Ro-Tel tomatoes.

    Place in casserole dish.
