- 5 c. cooked, diced chicken (I use all white meat)
- 2 Tbsp. vegetable oil
- 2 Tbsp. orange juice
- 2 Tbsp. vinegar
- 1 tsp. salt
- 1 c. slivered almonds
- 1 1/2 c. small green grapes
- 1 1/2 c. chopped celery
- 13 oz. can pineapple tidbits
- 1 can mandarin oranges
- 1 1/2 c. mayonnaise
- 3 c. cooked rice (optional)
Directions

1Combine the first 5 ingredients and set aside.

2Combine last 7 ingredients and add to the chicken mix and chill.
