Ingredients

  • 5 c. cooked, diced chicken (I use all white meat)
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. orange juice
  • 2 Tbsp. vinegar
  • 1 tsp. salt
  • 1 c. slivered almonds
  • 1 1/2 c. small green grapes
  • 1 1/2 c. chopped celery
  • 13 oz. can pineapple tidbits
  • 1 can mandarin oranges
  • 1 1/2 c. mayonnaise
  • 3 c. cooked rice (optional)

Directions

    Combine the first 5 ingredients and set aside.

    Combine last 7 ingredients and add to the chicken mix and chill.

    Serves 8 people.
