"chicken" Salad

Ingredients

  • 15 ounces chickpeas
  • 14-12 cup vegan mayonnaise
  • 1 tablespoon mustard
  • 12 tablespoon soy yogurt (any flavor)
  • 1 apple, chopped
  • 1 green onion, chopped
  • 14 cup sliced almonds or 14 cup walnuts
  • 12 teaspoon lemon juice
  • salt
  • pepper

Directions

    Drain chick peas and pour into meduim sized bowl, crush them up with a fork.

    Add in apple,green onion, almonds, salt and pepper and stir up.

    Add vegan mayo, mustard, soy yogurt and lemon juice and stir.

    Taste test it and add more ingredient if needed.

    Chill for an hour (optional).

    Serve in a wrap or sandwich with tomatoes, sprouts and spinach.
