- 2 large whole chicken breasts, halved, boned and skinned
- 1 egg, beaten with 1 Tbsp. water
- 1/2 c. Italian seasoned bread crumbs
- 1/4 c. olive or vegetable oil
- 1 garlic clove (whole)
- 1/2 tsp. basil
- 1/4 c. sherry
- 1 lemon, thinly sliced
- 2 tsp. capers (optional)
Directions

1Pound chicken breasts very thin between 2 sheets of waxed paper (use flat side of mallet).

2Dip chicken breasts first into beaten egg, then into bread crumbs.

3Heat oil with clove of garlic; remove garlic.

4Brown chicken for 3 minutes each side over medium heat.

5Add basil and sherry.

6Top with lemon slices and capers.

7Simmer 5 to 6 minutes or until cooked through.

8Makes 4 servings.
