Chicken Scampi

Ingredients

  • 3 whole broiler-fryer chicken breasts, boned, skinned and cut in bite size pieces
  • 1/2 head broccoli, cut in bite size pieces
  • 1 lb. linguine
  • 1/2 stick butter
  • 1/3 c. olive oil
  • 1 large onion, sliced
  • 1 large green pepper, cut in bite size pieces
  • 1/2 lemon, juiced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. grated Parmesan cheese

Directions

    In saucepan with salted water, place broccoli and steam 4 minutes.

    Boil linguine and drain.

    In large frypan, place butter and olive oil over medium heat.

    Add onion and pepper and saute 5 minutes.

    Remove from pan and reserve.

    To frypan, add chicken. Continue to cook, stirring about 5 minutes.

    Return onion and pepper to frypan.

    Add cooked broccoli and saute for 5 more minutes.

    Sprinkle with lemon juice, salt and pepper.

    Place linguine in serving dish, top with chicken vegetable mixture and sprinkle with cheese.
