  • 6 boneless chicken breasts
  • 1 egg
  • 2 c. breadcrumbs
  • 1/4 c. Parmesan cheese
  • 1/2 c. flour

Directions

    Dip chicken breasts in flour to coat.

    Then dip in egg (scrambled), then put chicken in breadcrumbs mixed with cheese. Pound with hand to coat.

    In frying pan, put 1/4 cup oil.

    When oil is hot (small piece of breadcrumbs sizzle), add chicken breasts.

    Fry each side about 5 to 10 minutes.

    Turn when lightly brown.

    Serve immediately.

    Tastes great with a little lemon juice sprinkled over or salsa!
