Ingredients

  • 1 hen or large fryer
  • 2 bay leaves
  • 1 small chopped onion
  • salt
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 1 c. chopped celery
  • 1 large can tomatoes
  • 2 c. chopped pitted ripe olives
  • 1 can mushrooms (optional)
  • small jar chopped pimento
  • 9 oz. spaghetti
  • grated cheese

Directions

    Boil chicken until tender with bay leaves and small onion and salt.

    Cool and cut in pieces.

    Simmer in fat of hen for one hour the large onion, bell pepper, celery and tomatoes.

    Add ripe olives, mushrooms and pimento.

    Cook 9 ounces spaghetti in salted chicken broth.

    Drain.

    Mix together chicken, sauce and spaghetti. Put on serving dish, topping with grated cheese.
