- 1 chicken
- 6 tomatoes
- 2 Tbsp. tomato paste
- 3 oz. olive oil
- 4 Tbsp. butter
- cinnamon
- salt
- pepper
- juice of 1 lemon
Directions

1Cut up chicken.

2Wash and pat dry.

3In a bowl, add lemon juice, cinnamon, salt and pepper to taste.

4Add chicken and coat well with mixture.

5In a large frying pan, heat butter and oil together and brown chicken.

6Remove chicken pieces to a platter. Keep warm.

7Peel and chop tomatoes.

8Add tomatoes, tomato paste and a cup of water to frying pan containing the butter and oil. Stir and cook tomatoes until very soft.

9Return chicken to pan. Cover with sauce.

10Cover and cook on low heat until chicken is ready to fall off the bone.

11May be served with rice.
