  • 1 (3 lb.) chicken
  • 1 can tomato soup
  • 1 can cream of mushroom soup
  • onion to taste
  • 1 (10 oz.) can mild enchilada sauce
  • 1 bag tortilla chips
  • Cheddar or Mozzarella cheese

    Boil chicken until meat comes away from the bone easily.

    Save 1 cup of the broth. Combine broken chicken pieces, soups, sauce and onion.

    Heat until hot.

    While heating, put a layer of tortilla chips in baking dish.

    Pour taco stuff over chips.

    Add another layer of chips.

    Cover with shredded cheese of choice. Pour chicken broth over this.

    Cover with lid or aluminum foil. Bake at 350° for 30 minutes or until done.
