Ingredients

  • 2 tsp. vegetable oil
  • 1/2 c. sliced onion
  • 2 garlic cloves, minced
  • 1 medium tomato, chopped
  • 1/2 c. tomato sauce
  • dash of hot sauce
  • dash of oregano leaves
  • dash of salt
  • dash of pepper
  • 4 oz. skinned, boned and cooked chicken, diced
  • 2 taco shells
  • 1 oz. Cheddar cheese, shredded
  • lettuce

Directions

    In a 9 or 10-inch skillet, heat oil.

    Add onion and garlic and saute until onion is translucent, about 5 minutes.

    Add tomato, tomato sauce and seasonings.

    Cook, stirring occasionally, for about 5 minutes.

    Add chicken and cook until heated through. Divide chicken mixture into taco shells, then top with cheese and lettuce.
