Chicken Tetrazzini

  • 1 c. celery, chopped
  • 1 medium green pepper, chopped or 1 small jar pimentos
  • 2 c. chicken broth
  • 1 (8 oz.) can mushrooms (optional)
  • 1 1/2 cans cream of mushroom soup
  • 1 medium onion, chopped
  • 2 Tbsp. butter or margarine
  • 3 c. cooked chicken, diced
  • 1 (8 oz.) pkg. spaghetti, cooked
  • 3 Tbsp. grated Cheddar cheese

Directions

    Saute celery, green pepper and onion in butter until tender and golden brown; set aside.

    Heat chicken in broth and add mushroom soup, mushrooms and sauteed mixture.

    Grease a 9 x 14-inch Pyrex dish.

    Put half of spaghetti in the bottom of the dish, then half of the chicken mixture.

    Repeat layers.

    Top with grated cheese.

    Bake at 350° for 30 minutes.
