Ingredients

  • 8 chicken breasts (boned and skinless)
  • 2 c. olive oil
  • 1/2 bay leaf
  • 2 Tbsp. shallots, chopped
  • 6 Tbsp. minced garlic
  • 1/4 tsp. thyme
  • 1/4 tsp. pepper
  • 1/4 tsp. Tabasco
  • 1/2 tsp. basil
  • 1/8 tsp. rosemary
  • 1/8 tsp. oregano

    Insure chicken is boned and pounded.

    Mix all other ingredients into shallow ovenproof dish.

    Add chicken and marinate overnight in refrigerator.

    Turn occasionally.

    Heat oven to 425°. Remove 1/2 of marinade.

    Bake 12 to 15 minutes or until done. Serve.
