  • 4 boneless chicken breasts halves
  • 1/2 lb. sliced fresh mushrooms
  • 1 1/2 c. baby carrots, sliced lengthwise
  • 1 c. frozen pearl onion, thawed
  • 1/2 c. julienne peppers
  • 1/4 tsp. pepper
  • 1 tsp. thyme
  • 1/2 tsp. salt

Directions

    Flatten chicken to 1/2-inch thickness.

    Place each on a greased heavy piece of foil.

    Layer veggies on top of chicken. Season.

    Fold and seal.

    Bake at 375° for approximately 20 minutes.
