- 6 chicken cutlets, skinless, flattened
- 8 Tbsp. flour
- paprika, salt and pepper to taste
- 2 1/2 Tbsp. butter
- 1/2 c. olive oil or to taste
- juice of 1 lemon
- 2 oz. capers
Directions

1In a shallow bowl, combine flour, paprika, salt and pepper. Dip cutlets in flour mixture.

2Saute chicken in butter and olive oil on medium-high heat until golden brown.

3Remove cutlets. Discard oil mixture.

4Add lemon juice and capers.

5Return cutlets to pan.

6Saute over low heat for about 5 minutes.

7Serve over rice.

8Makes 6 servings.
