  • 1 quartered chicken
  • 2 small eggplants (1 1/4 lb.)
  • 1 large peeled onion
  • 2 small tomatoes (1/2 lb.)
  • 2 Tbsp. olive oil
  • 1/2 c. dry wine
  • 1/2 c. chicken broth
  • 1/4 c. wine vinegar
  • 1 Tbsp. minced garlic
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1/4 tsp. red pepper flakes
  • parsley

    Sprinkle chicken with salt and pepper.

    Set aside.

    Trim off eggplant ends, cut in 1/2 lengthwise and each 1/2 in thirds lengthwise.

    Then cut across in 1-inch sections (total 5 cups). Cut onion in 1/2.
