- 2 lb. chicken
- 2 Tbsp. olive oil
- 1 large garlic clove
- 1 Tbsp. lemon juice
- salt and pepper to taste
- 1 Tbsp. chopped parsley
- 8 Tbsp. butter
- 1 1/2 tsp. dried basil
Directions

1Rub chicken with garlic, then salt and pepper.

2Throw away garlic.

3Melt butter with oil in small saucepan.

4Remove from heat and stir in lemon juice, parlsey and basil.

5Brush chicken all over with mixture, then place skin-side down on lined broiler rack. Place under boiler for 7 to 10 minutes on each side, basting frequently with butter mixture.

6After 15 minutes, test chicken for doneness by inserting skewer into thigh, if juices run clear, the bird is done.

7Spoon over any remaining butter mixture.
