Chicken With Nuts

- 1/2 lb. walnuts or almonds
- 2 chicken breasts, skinned, boned and cut into chunks
- 4 stalks celery, cut diagonally
- 2 c. chicken broth
- 2 tsp. cornstarch
- olive oil
Directions

1Stir-fry walnuts in small amount of olive oil a few minutes. Remove from pan.

2Be sure to take nuts out before they darken or they will taste bitter.

3Stir-fry chicken until they are no longer pink.

4Push chicken to one side of pan.

5Stir-fry celery until they are bright green.

6Return nuts back to pan and add chicken broth and stir in cornstarch paste (2 teaspoons cornstarch and enough water to form paste) to thicken.

7Serve immediately with brown rice.
