Ingredients
- 1 cut up chicken
- 3 Tbsp. olive oil
- 1/2 lb. mushrooms
- 1 bay leaf
- 1/4 tsp. thyme
- 3/4 c. chopped onion
- 1 1/2 tsp. chopped garlic
- 2 Tbsp. flour
- 1/2 c. white wine
- 1 c. crushed tomatoes
- 3/4 c. chicken broth
- 6 flat anchovies, chopped
- 24 pitted green olives
Directions

1Heat oil in skillet; fry chicken pieces.

2Add mushrooms; continue cooking.

3Add bay leaf, thyme and garlic, stirring so ingredients mix.

4Cook approximately 12 minutes.

5Sprinkle ingredients with flour; stir to blend.

6Add wine, tomatoes and broth; stir and bring to boil in separate pan.

7Pour over chicken in skillet.

8Add anchovies; simmer for about 5 minutes.

9Add olives; continue to cook 5 more minutes.

10Yields 4 servings.
