Chicken With White Wine

  • 4 large chicken breasts (boneless)
  • 1/2 to 3/4 tsp. salt
  • pepper to taste
  • pinch of paprika
  • flour as needed
  • 1/2 c. butter
  • 1 c. mushrooms
  • 1/4 c. chopped scallions
  • 1 c. chopped celery
  • 1 clove garlic, sliced thin
  • 1/2 c. white table wine

Directions

    Sprinkle chicken with salt, pepper and paprika.

    Coat well with flour.

    Brown in 1/4 cup butter.

    Remove chicken and add remaining butter.

    Brown mushrooms, scallions, celery and garlic. Return chicken to pan.

    Add wine and simmer slowly for 45 minutes or until tender.
