Chicken-Ziti Salad

Ingredients
- 1/2 lb. cooked ziti
- 1/2 c. chicken consomme
- 3/4 c. fresh green beans, cut in 1/2-inch lengths
- 1 small zucchini, quartered and cut into 1/2-inch slices
- 1/2 c. peeled and diced cucumber
- 2 c. diced cooked chicken
- 1/2 c. minced red onion
- 3/4 c. mayonnaise
- 1 Tbsp. minced fresh dill (if possible)
- 1/4 c. chopped walnuts
Directions

1Cook ziti.

2Cook beans 1 minute.

3Add zucchini and cook 2 minutes longer.

4Vegetables should be crunchy.

5Drain and allow to cool.

6Mix with ziti.

7Add cucumber, chicken and onion.

8Season with salt and pepper.

9Fold in mayonnaise and dill.

10Refrigerate until used.

11If dressing becomes too stiff, mix in more consomme.
