  • 1 loaf Italian bread
  • 1/2 c. olive oil, plus extra
  • 1 (15 to 16 oz.) can chickpeas or garbanzo beans, drained
  • 3 cloves minced garlic
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 tsp. chili powder
  • 1/4 c. coarsely chopped parsley

Directions

    Preheat oven to 375°. Slice the bread in half lengthwise. Brush the cut side with olive oil and bake 15 to 20 minutes until toasted. Combine in a blender jar or food processor the remaining ingredients; puree to a paste. Spread on the bread; garnish with the parsley and slice into serving size pieces. Serves 8 to 10.
