- 2 (19 oz.) cans chickpeas, drained and rinsed
- 1 clove garlic, minced
- 1/2 c. black olives, chopped or sliced
- 1/3 c. chopped red onion
- 1/3 c. chopped parsley
- 1/4 c. vinegar
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. olive oil
Directions

1Combine the first 5 ingredients in a bowl.

2In a small jar, shake together the vinegar, salt and pepper. Add the olive oil and shake again.

3Pour dressing over chickpea mixture and toss.
