  • 2 (19 oz.) cans chickpeas, drained and rinsed
  • 1 clove garlic, minced
  • 1/2 c. black olives, chopped or sliced
  • 1/3 c. chopped red onion
  • 1/3 c. chopped parsley
  • 1/4 c. vinegar
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. olive oil

Directions

    Combine the first 5 ingredients in a bowl.

    In a small jar, shake together the vinegar, salt and pepper. Add the olive oil and shake again.

    Pour dressing over chickpea mixture and toss.
