  • 1 to 2 Tbsp. margarine
  • 5 eggs or egg substitute
  • 1/4 c. plus 1 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1 c. cottage cheese
  • 4 oz. green chilies
  • 1/2 lb. grated Monterey Jack cheese

Directions

    Melt margarine in 9-inch round pan.

    Beat eggs lightly.

    Add blended flour and baking powder.

    Add melted margarine, green chilies and cheese.

    Mix and pour into pan.

    Bake at 400° for 15 minutes.

    Turn oven to 350° and bake for 15 to 20 minutes more. Freezes well.

    Thaw and reheat at 325° for 15 to 20 minutes.

    Can be cut into cubes and served as an appetizer.
