- 1 to 2 Tbsp. margarine
- 5 eggs or egg substitute
- 1/4 c. plus 1 Tbsp. flour
- 1/2 tsp. baking powder
- 1 c. cottage cheese
- 4 oz. green chilies
- 1/2 lb. grated Monterey Jack cheese
Directions

1Melt margarine in 9-inch round pan.

2Beat eggs lightly.

3Add blended flour and baking powder.

4Add melted margarine, green chilies and cheese.

5Mix and pour into pan.

6Bake at 400° for 15 minutes.

7Turn oven to 350° and bake for 15 to 20 minutes more. Freezes well.

8Thaw and reheat at 325° for 15 to 20 minutes.

9Can be cut into cubes and served as an appetizer.
