- 2-1/2 cups Egg Beaters (or Equivalent Whole Eggs)
- 1/2 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 16 ounces, weight Cottage Cheese, Small Curd
- 1 pound Shredded Jack Cheese (or Whatever You Prefer)
- 1/2 cups Butter Or Margarine, Melted
- 4 ounces, weight Diced Green Chiles (or 1/4 Cup Green Onions)
Directions

1Beat eggs or place egg substitute in a large bowl and add flour, baking powder, salt, cottage cheese, jack cheese, melted butter and blend until smooth. Stir in chiles or green onions.

2Pour into a buttered 9x13 pan and bake for 35 minutes at 350 degrees or until top is browned and center is firm. Serve hot.

3Leftovers can be frozen and reheated in the microwave.
