Chile Egg Puff Recipe

  • 10 Large eggs
  • 1 teaspoon baking pwdr
  • 2 c. cottage cheese
  • 1/3 c. butter, melted & cooled
  • 1/2 c. flour
  • 1/2 teaspoon salt
  • 4 c. grated Jack cheese
  • 2 (4 ounce.) cans diced chilies

Directions

    Beat Large eggs in large bowl, beat in flour, butter, baking pwdr and salt.

    Mix together cottage cheese, Jack cheese and chilies, and add in to egg mix.

    Blend till smooth and pour into well buttered 9 x 13 inch pan.

    Bake at 350 degrees till puffy and golden, approximately 45 min to 1 hour.

    Egg Beaters may be used in place of Large eggs.

    (Great to serve for a brunch!)
