- 1 (10 oz.) can whole green chiles
- 5 eggs
- 2/3 c. milk
- 6 Tbsp. flour
- 3/4 tsp. baking powder
- 1 c. grated Cheddar cheese
- 6 oz. Monterey Jack cheese
Directions

1Rinse chiles; pat dry with paper towel.

2Slit lengthwise; carefully remove any seeds found inside.

3Cut Monterey Jack cheese into 1/2 x 1/2-inch strips; place inside chile peppers.

4Place chiles side by side in greased baking dish (8 cup size).

5Beat eggs until foamy; beat in milk, flour and baking powder until smooth.

6Pour over chiles.

7Sprinkle Cheddar cheese over top. Bake uncovered at 375° for 40 minutes until set in the middle. Yields 4 to 6 servings.

8Serve with salsa.
