  • 1 big onion, finely sliced
  • salt and pepper
  • oil
  • 1 or 2 green chili peppers
  • 1 Tbsp. parsley or cilantro, finely chopped

    Soften the sliced onion by leaving it in water with salt and a spurt of vinegar for 15 minutes.
