Ingredients

  • 2 green peppers, chopped
  • 2 large onions, chopped
  • 6 cloves garlic
  • 2 bay leaves
  • 1/4 c. oil
  • 2 Tbsp. chili powder
  • 2 tsp. salt
  • 1 tsp. sugar
  • 1 lb. ground beef
  • 1/2 c. canned chili peppers, chopped (optional)
  • 4 lb. whole, peeled tomatoes
  • 2 lb. cooked, drained kidney beans

Directions

    In heavy-bottomed saucepan, cook peppers, onions, garlic and bay leaves in oil, stirring frequently, until vegetables are soft. Add chili powder, salt and sugar.

    Cook, stirring constantly, 2 minutes more.

    Add meat and cook until lightly brown.

    Add chili peppers, tomatoes and their juice and kidney beans.

    Simmer, uncovered, for 2 hours.

    Yields 6 to 8 servings.
