Ingredients

  • 3 Tbsp. olive oil
  • 1/4 stick butter
  • 2 large onions, chopped fine
  • 1 lb. ground round (not lean)
  • 1 large can tomato suace
  • 2 Tbsp. tomato paste
  • 1/4 c. red wine
  • 1 tsp. salt or to taste
  • 3 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • oregano (if desired)

Directions

    Saute onions in butter and olive oil until clear but not brown.

    Add the meat and saute until well done.

    Add tomato sauce, paste and wine.

    Cook for a few minutes until well mixed.

    Add the remaining ingredients, cover and cook slowly 45 minutes to 1 hour. Add beans if desired.

    Serves about 6.
