Ingredients

  • 2 lb. meat, ground beef or stew or mix both
  • 1 c. green pepper
  • 28 oz. stewed tomatoes
  • 15 oz. tomato sauce or 6 oz. tomato paste with water
  • 10 1/2 oz. beef broth
  • 2 to 4 tsp. chili powder or up to 3 Tbsp.
  • 1/4 tsp. oregano
  • 1/4 c. ketchup
  • 2 1/2 tsp. salt or Lawry's seasoned salt
  • 1 c. onion, diced
  • 2 Tbsp. oil
  • 2 small cloves of garlic, or to taste
  • 1 1/2 c. beer or water (beer preferred)
  • 4 oz. green chilies, undrained
  • 1 to 3 tsp. cumin (1 Tbsp.)
  • 1/4 to 1/2 tsp. cayenne (red pepper)
  • 1/4 tsp. cinnamon
  • 1 Tbsp. Worcestershire sauce
  • 2 (15 1/2 oz.) kidney beans, undrained*

    Brown onions, green pepper, garlic and meat, then add beans and balance of ingredients in Dutch oven.

    Simmer 1/2 hour and serve.
