  • 1 lb dry red kidney beans
  • 1 medium onion, chopped
  • 2 -4 garlic cloves, finely chopped
  • 14 lb bacon, chopped
  • 1 tablespoon chili powder, to taste
  • salt & freshly ground black pepper
  • 1 cup red wine or 1 cup chicken broth
  • 3 cups chicken broth
  • 1 (16 ounce) can chopped tomatoes

Directions

    Soak the beans in water overnight.

    Drain and combine with the remaining ingredients in a large pot.

    Bring to a boil and reduce the heat to low.

    Simmer covered for 4 hours, or until the beans are tender and the sauce has thickened, adding more chicken broth if necessary.
