  • 1 1/2 c. red chili beans or 1 (No. 2) can kidney beans
  • 1 chopped green pepper
  • 3 Tbsp. fat (bacon grease if you have it)
  • 1 (No. 2) can tomatoes
  • 1 1/2 tsp. salt
  • 1/8 tsp. cayenne
  • 1 to 2 tsp. chili powder
  • 1 large onion, diced
  • 2 lb. ground beef
  • 1/8 tsp. paprika
  • 3 whole cloves
  • 1 bay leaf

    If using dried red beans, soak overnight.

    Cook in boiling water until tender.

    Brown onion and green pepper in hot fat, then add meat.

    Cook 5 minutes.

    Add tomatoes and seasoning.

    Simmer 2 hours, adding water if necessary.

    Add beans; heat thoroughly.
