Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/2 c. ketchup
  • 1 tsp. cumin
  • 3 Tbsp. chili powder
  • 1 tsp. salt
  • 1 (15 oz.) can kidney beans, drained
  • 1 c. sharp Cheddar cheese, grated
  • 1/2 c. stuffed green olives, sliced

Directions

    Brown meat with onion.

    Add ketchup, cumin, chili powder and salt.

    Mash kidney beans with fork; add to meat mixture.

    Simmer for 20 minutes.

    Remove from heat; set aside for 2 1/2 hours (covered).

    Reheat in chafing dish.

    To serve, sprinkle grated cheese, more chopped onion and chopped olives.

    Serve with tortilla chips.

    Replenish cheese and onion on top, as needed.
