  • 10 eggs
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 pt. cottage cheese
  • 1 lb. Monterey Jack cheese
  • 1/2 c. butter, melted
  • 2 (4 oz.) cans diced green chilies

Directions

    Beat eggs until fluffy, light and lemon colored.

    Add flour, baking powder, salt, cottage cheese, Jack cheese and melted butter.

    Blend until mixed.

    Stir in chilies.

    Pour into 9 x 13-inch baking dish.

    Bake at 350° for 35 minutes or until top is lightly brown and center appears firm.
