- 1 lb. Monterey Jack cheese, grated
- 1 lb. Cheddar cheese, grated
- 3 eggs
- 3 Tbsp. flour
- 1 (5 oz.) can evaporated milk
- 1 large can whole mild chili peppers
- 1 small can tomato sauce
Directions

1Mix together cheeses.

2Beat together eggs, flour and milk. Layer half the cheese mixture on bottom of a 9 x 11-inch dish. Layer chili peppers over cheese.

3Top with remaining half cheese mixture.

4Pour egg mixture over all.

5Bake at 350° for 30 minutes. Pour tomato sauce over top.

6Bake 15 minutes more. Slice to serve.
