  • 1 lb. Monterey Jack cheese, grated
  • 1 lb. Cheddar cheese, grated
  • 3 eggs
  • 3 Tbsp. flour
  • 1 (5 oz.) can evaporated milk
  • 1 large can whole mild chili peppers
  • 1 small can tomato sauce

Directions

    Mix together cheeses.

    Beat together eggs, flour and milk. Layer half the cheese mixture on bottom of a 9 x 11-inch dish. Layer chili peppers over cheese.

    Top with remaining half cheese mixture.

    Pour egg mixture over all.

    Bake at 350° for 30 minutes. Pour tomato sauce over top.

    Bake 15 minutes more. Slice to serve.
