- 3 to 4 (7 oz.) cans green Ortega chilis
- 1 lb. Cheddar cheese
- 1 lb. Jack cheese
- 1 large can evaporated milk
- 2 small cans tomato sauce
- 4 eggs
Directions

1Remove the seeds and flatten half of the chilis in a 9 X 13 flat pan.

2Grate or slice Cheddar cheese and layer it over chilis. Make a second layer of the remaining chilis as before.

3Make a layer of the Jack cheese.

4Beat whites of 4 eggs in a bowl.

5Beat yolks in a separate bowl.

6To the yolks add 1 1/2 tsp. of salt, pepper, and the can of evaporated milk.

7Fold this into the whites and pour over chilis and cheese.

8Bake in 325° oven for 45 minutes.

9Then pour on tomato sauce and bake for 30 more minutes. Makes a lot!
