- 1 lb. ground beef
- 1/2 c. onion, chopped
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 (7 oz.) cans green chiles
- 1 1/2 c. shredded Cheddar cheese
- 1 1/2 c. milk
- 4 eggs, beaten
- few dashes Tabasco
Directions

1Brown ground beef and onion.

2Drain.

3Sprinkle meat with salt and pepper.

4Halve chiles and remove seeds.

5Place half of the chiles in a 10 x 6 x 1 1/2-inch baking dish; sprinkle with cheese and top with meat mixture.

6Arrange remaining chiles over meat. Blend eggs, milk, flour, salt and Tabasco; beat until smooth. Pour over chiles.

7Bake at 350° for 45 to 50 minutes, until knife inserted comes out clean.
