- 1/4 c. butter (1/2 stick)
- 2 (7 oz.) cans diced green chiles
- 1 lb. Jack cheese, shredded (I use the Mexican shredded cheese; optional)
- 1 c. buttermilk baking mix (such as Bisquick)
- 3 eggs
- 3/4 tsp. salt
- 2 c. milk
Directions

1In a 13 x 9-inch baking dish, melt butter.

2Sprinkle chiles over butter.

3Spread cheese over chiles.

4In a bowl, mix buttermilk baking mix, eggs, salt and milk.

5Pour over cheese. Bake in preheated 350° oven 30 to 40 minutes or until golden brown on top.
