Ingredients
- 3 Tbsp. bacon fat or vegetable oil
- 1 c. coarsely chopped onions
- 2 lb. lean pork, cut into 1/2 inch cubes
- 2 Tbsp. flour
- 1/2 tsp. ground cumin
- 2 garlic cloves, minced
- 10 Anaheim chilies, roasted, peeled, cored, seeded and diced
- 3 c. chicken stock
- salt and pepper to taste
Directions

1In large pot heat bacon fat; saute onions until soft.

2Add pork cubes.

3Cook for 5 minutes.

4Sprinkle flour over pork and onions, cook until the pork is browned and onions are golden.

5Stir in the cumin, garlic and chilies, mixing well.

6Add the chicken stock and stir.

7Add salt and pepper.

8Lower heat and simmer, uncovered, until meat is tender (about 1 1/2 to 2 hours).

9Serve with warm tortillas.
